Inspired by the modern bodega, Bomba Tapas Bar and Rooftop has replaced the old Aylesbury with a more casual venture, allowing chefs and co-owners Jesse Gerner and Andrew Fisk to return to their Spanish roots and cook dishes from the entire region. Essentially a Spanish workers bar, simple and affordable tapas bites of fried oysters, cheesy manchego croquettes and small char-grilled sourdough montadidos with tomato and Serrano jamon are perfect for sharing, with raciones on hand for larger appetites (the predominantly Spanish wine list comes well within budget too).

Following a million-dollar renovation in 2018, this intimate rooftop bar overlooking a leafy Lonsdale Street has become even more popular. Sample from the ever-changing menu, sip a sherry or vermouth and stay for a cocktail – or a movie: silent Spanish films are projected on the wall of the theatre beside it.
