O que você fará

We will start with a little introduction about ingredients, tastes and traveling with food. The origin of certain plants, like tomatoes, corn, chiles and the trips over history that made a difference in the development of different tastes and techniques in different areas of the world. I am an historian before being a chef and I love to look for the origins: food and habits go together and you can't learn how to cook if you don't know your ingredients.
Then we'll talk about the techniques: from technique comes taste. The taste of garlic, for example, is totally different if you use it raw or cooked, chopped, squeezed, sliced, blonde, brown: cuisine is technique, and you must know what you want in order to achieve a certain taste.
We'll learn and cook a full dinner, and at the end the reward is sitting with a nice glass of wine, or two, and enjoy all that we made.
Other things to note
All my menus are based on local natural products, so we will cook only what is in season. Slow Food is my philosophy. We have to adapt to nature and accept the challenges of seasonal products.

My passion has being cooking since I was 6 years old. Growing up in a house with my mom, famous writer of cooking books in Italy I learned to love food, cooking and the conviviality of sitting at the table with friends. This is why my classes include a dinner: food and friendship go together. Nothing better than preparing a meal with a glass of wine in your hand and enjoy the company at the same time.
I have being teaching history of cuisine and ingredients in Mexican universities and in my restaurant and my classes are focused on using only local products, as a member of Slow Food since it started.
I won an Italian Cuisine Worldwide Award in 2012 in Moscow and I am an official Master Chef of Italian Cuisine.

The House of the Birds - La Casa de las Aves - is a home in a big garden visited by 11 species of birds among which you can see humming birds, cenzontle and many more. The atmosphere of the class is very relaxed: food is fun and my idea is cooking and learning having a good time!
I had a stove made to cook outside to enjoy the garden while we cook.

Awesome experience. Menu was developed to accommodate interests, Silvia was interesting and had great expertise, and created a fun and relaxing evening and experience.

From the beginning Silvia set the agenda based on questions she asked us about our interests. She created a menu that matched our interests perfectly and even modified the recipes to meet our differing tastes when she learned about that when we arrived. Her information about the various techniques of cooking were grounded in history and specific to the tasks at hand. She provided recipes for everything to which we could add notes as we went along. The meal from appetizers to dessert was delicious and a perfect blend of flavors that we feel well prepared to duplicate. She also invited us to contact her if we have questions after we get home and the first time we make things. We highly recommend Silvia’s cooking class to anyone interested in getting to know Mexican cuisine within an historical and international context. Bon appetit!

Silvia emailed me right after booking to confirm if we had any allergies and/or food preferences. Once we arrived she had a list of the foods we would make and recipes. Everything we made was absolutely wonderful and we learned some new cooking techniques. Highly recommend

Our family of 6 adults thoroughly enjoyed our experience with Sylvia. Sylvia is an expert and we elevated our understanding of many things learning from her. The food was wonderful. I truly recommend an evening with Sylvia in La Paz!

Silvia is so warm and welcoming, her recipes are very good and very replicable (and the food tastes great!), and we were very honored to be in her home and left very pleased. As constructed, the course is not very hands-on, but we didn't think that detracted significantly from the experience. Make sure you request the aguachile!!!
