Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this masterpiece of Italian culinary tradition. On request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price
Other things to note
The aging process requires cold temperatures in winter and hot in summer so be prepared with the appropriate equipment. Don't forget the photo/video camera.

Become a Balsamic Person! This is truly one of the most enlightening experiences I've had, not just on airbnb but in general. I don't know where to start... Guido is just an incredible person who is so passionate about the art of making Traditional Balsamic Vinegar and it rubs off you as you leave. His content, experience design is just immaculate. Although you're diving deep into this world that might be new to you, you can't help but nerd out about it, all thanks to Guido! Thanks to this experience, we not only have a new found interest in Balsamic Vinegar but a special respect for this regional art. I initially thought dining at Osteria Francescana (former world's no. 1 restaurant) was going to be the highlight of our trip. Looking back, I feel this experience levels with it if not trumps it!

Changed the way I perceive Balsamic Vinegar! Was always a fan but now I have so much more respect for the traditional balsamic vinegar community and the practice itself. Eye opening!! Guido's passion and love for the process of making balsamic vinegar is mesmerising. His explanations were well rounded and we felt comfortable to ask questions in between which made it much more personal. Guido is a lot of fun! This experience made our trip to Modena very special.

Guido and his Acetaia are an experience. He is an excellent host and a master of the Tradizionale.The tour is very entertaining and interesting, you can taste the aceto in all its stages of production and at the end you can taste the product with other ingredients. It felt like visiting a friend for a balsamico afternoon! Foremost Guido and his positiv, energetic and enthusiastic personality gave the experience that special twist. You felt that he loves what he is doing and that’s not only a job - it is a big and important part of his life! And to enjoy this in this/his private surrounding was priceless! We learned a lot and it was very, very interesting! We would recommend this experience to everybody that is around! We give Guido minimum 255 points :)! Thank you Guido for this special experience!
