O que você fará

Upon arrival at the farm you will be invited into our NY State licensed cheese production room. After learning about each participant's interest in cheese making, we will discuss and become familiar with the characteristics of different types of milk for cheese making, ingredients , and equipment. and will learn about the importance of good sanitation in cheese making. We will work through the entire process of making three different fresh cheeses. I will have each stage of the cheese making process ready for you to experience and handle. We begin with warming milk to start a fresh Chevre and then culturing and adding enzyme. We will then warm milk to start Greek Style Feta and add culture and enzyme. While the culture and enzyme do their thing in the feta milk we will work with set Chevre and hang the curd to drain followed by handling drained Chevre and discuss salting and flavoring. Returning to the Feta we will add rennet and learn to cut and stir curds while evaluating their readiness for draining. We will prepare drained Feta curd for curing as well as brining cured feta. Finally we will make a fresh whole milk ricotta. In addition to making cheese we will sample Acorn Hill Farm products and finally spend some time in the barn meeting our baby goats and members of the milking herd. Each participant will take home the three cheeses we make during our time together
Other things to note
Our workshop takes place on a working farm in our licensed creamery. We will be spending much of our time together standing on a concrete floor so comfortable supportive shoes are a must. Please let us know in advance if you have any concerns about standing so we can help make your day comfortable.

My daughter and I farm together here at Acorn Hill Farm where we raise Nubian goats and make goat cheese, yogurt, fudge and sometimes soap. Acorn Hill Farm came into being after I brought home two goats to provide dairy for personal use and quickly developed into a project to build a licensed facility to make cheese. 2019 marks seventeen years of making goat milk products and our move to a bigger farm and dairy facilities. I love sharing the science and art of chessemaking in our on farm cheese production room and have held workshops periodically over the past ten years as well as presenting on farmstead cheese making and goat related topics at NOFA-NY winter conferences.

Onde você estará

We will spend the bulk of our time in our cheese production room where participants can see artisan farmstead cheese making equipment and learn what it takes to make cheese in New York State. We will also enter our dairy barn and mingle with some of our milking goats and visit with our baby goats.

Interesting and informative class on an authentic working goat farm. Instructor was very friendly, provided easy to understand and “hands on” instruction. Snack and cheese samples provided along with written instruction/review to take home. Goat herd was friendly, adorable, and very approachable.

For any cheese lover, and there are lots of you out there, this is a great opportunity to learn how its made and participate in the process. Great overall experience and tons of fun hanging with the goats after.

This was a fantastic experience! I came excited to learn about making cheese and my expectations were exceeded. Joyce's knowledge was tremendous, her passion high and her goats adorable! Great group of people in attendance as well.
